May 29 - Photo-A-Day

May 29: A Number
Number 10...its the number of lbs i've lost but i'm stuck at.  Proud that I lost those but frustrated that I can't seem to push forward.

Conquering The Gondola

This past weekend we took a family trip to the mountains.  We live right beside them and yet they always mesmerize me.  They’re just so beautiful!  One of the special things we did on our trip was try the gondola in Banff.  Now, understand that I am sort of afraid of heights.  I don’t mind being in an airplane yet things like a gondola freak me out.  How does that little string promise to hold me up?!  I decided it was time to conquer the fear and do it.  So up we went! 

The gondola (4 person cabin) takes you up Sulphur Mountain.  The views are SPECTACULAR!  In 8 short minutes you’re on top of a mountain at 2,281m (7,486ft).  When you’re at the top, there are stairs and a pathway to an old ranger station.  Definitely worth the hike!  Click here for more information on the Banff Gondola if you’re interested in visiting.  Here are some pictures of my experience:

May Photo-A-Day Catch-up: 25-28

We had a FANTASTIC WEEKEND in the mountains and shut off all technology...so relaxing!  Here is a catch-up on last few days.  More posts to come about our weekend :)

We did something different and booked a little chalet for the weekend in Canmore.

This is where I was at 12 o'clock...a gondola in Banff! Im afraid of heights so this was a HUGE feat for me.  Just don't look down as you go up!  So worth the trip up :)

We took a stroll down Banff Avenue and no trip is complete without a stop at the Rocky Mountain Fudge for some treats mmmmm!

May 28: The Weather Today

Oh Calgary....its a bit chilly yet this morning but at least we got some sunshine :)

Recipe: Beer Cake with Orange Glaze

When I tell someone I just made "Beer Cake" I typically get a funny look but wait until they taste it!  This is a Portuguese family recipe and in Portuguese it's called "Bolo de Cerveja" which sounds much fancier.  I had one lonely beer in the fridge from a while ago (we don't drink that much beer) so it was put to good use.  You can use non-alcoholic beer for this but today it was an Dos Equis!

Beer Cake
  • 3 cups all-purpose flour
  • 2 cups sugar
  • 1 tsp baking powder
  • 4 eggs, separated
  • 1 cup butter (i used margarine)
  • 1 cup beer
  1. In a large bowl, cream together the butter and sugar. 
  2. Add the egg yolks and beat for 1 minute until creamy.
  3. Add flour and baking powder and mix together. Mix in beer.
  4. In small bowl, beat egg white until light and fluffy.  Fold in to other mixture.
  5. Pour into greased cake pan.  Bake at 375F for 50 minutes or until toothpick comes out clean!
I like a nice glaze as opposed to frosting on my cakes so I made this orange glaze which was a hit.

Orange Glaze
  • 1 cup icing sugar
  • 3 tbsp freshly squeezed orange juice
  • orange zest from one orange
  • 3 thin slices from an orange to decorate
  1. Mix everything together until thickens.
  2. Pour over warm cake :)

It didn't last very long!

Tacos & Mojitos Night

I may have missed all the Cinco de Mayo celebrations the other day but I made up for it tonight!  I through together random ingredients to make one delicious dinner while Steve perfected our first homemade mojitos...man, is he a keeper!  He shares his mojito recipe below after taco recipe.

Turkey Tacos

  • ground turkey breast (1 pkg)
  • garlic
  • salt
  • oregano
  • chili powder
  • ketchup (2 tbsp)
  • brown rice (1/2 cup uncooked)
  • bruschetta (1/2 cup)
  • soft tortilla wraps
  • cheese (1 cup, grated)

  1. In saucepan, cook rice as normal.
  2. In skillet, brown turkey breast.  Watch it carefully as it will dry up quickly.
  3. Add spices to taste.
  4. Add bruschetta, mix.  You can also use salsa instead.
  5. Add ketchup and rice, mix together.  Simmer for 5 minutes.
  6. Add 1/2 the amount of grated cheese and mix.  The rest of the cheese you can use when assembling your wraps.
  7. Ready to serve!  We like to make our wraps as we go at the dinner table. 

and the best part.... MOJITOS!!!
Steve's Mojito Recipe
  • 1.5 oz Rum (we used Appleton 12 yr)
  • 3/4 oz fresh lime juice
  • 1 oz simple syrup
  • 2 dases Angostura Bitters
  • 2 sprigs of fresh mint
  • top with club soda
Muddle 1 mint sprig with the simple syrup and lime juice in bottom of mixing glass.  Add the rest of ingredients and shake with ice.  Strain over cracked ice into high ball glass, top with soda and garnish with other sprig of mint.  ENJOY!!

Floating Gerbera Centerpiece

Happy Monday! We're starting off the week with a super easy and inexpensive centerpiece tutorial.  I recently made these for a wedding in Kananaskis.

What You'll Need:
  • TRYGG serving bowl from Ikea (runs for about $3.99)
  • black river rocks
  • 3 gerbera daisies
  • submersible LED
  • water
  1. Lay a handful of river rocks in the bottom of the bowl.
  2. Put submersible LED light at center of bottom of vases, nestled between rocks but not covered.
  3. Fill bowl 3/4 with room temperature water.
  4. Cut the stems of the gerbera daisies so there is only about 1" left. Float on top of water.
*If you don't want to use submersible LED, I suggest using floating candles on top :)
