Recipe: Beer Cake with Orange Glaze

When I tell someone I just made "Beer Cake" I typically get a funny look but wait until they taste it!  This is a Portuguese family recipe and in Portuguese it's called "Bolo de Cerveja" which sounds much fancier.  I had one lonely beer in the fridge from a while ago (we don't drink that much beer) so it was put to good use.  You can use non-alcoholic beer for this but today it was an Dos Equis!

Beer Cake
Ingredients:
  • 3 cups all-purpose flour
  • 2 cups sugar
  • 1 tsp baking powder
  • 4 eggs, separated
  • 1 cup butter (i used margarine)
  • 1 cup beer
How-To:
  1. In a large bowl, cream together the butter and sugar. 
  2. Add the egg yolks and beat for 1 minute until creamy.
  3. Add flour and baking powder and mix together. Mix in beer.
  4. In small bowl, beat egg white until light and fluffy.  Fold in to other mixture.
  5. Pour into greased cake pan.  Bake at 375F for 50 minutes or until toothpick comes out clean!
I like a nice glaze as opposed to frosting on my cakes so I made this orange glaze which was a hit.

Orange Glaze
Ingredients:
  • 1 cup icing sugar
  • 3 tbsp freshly squeezed orange juice
  • orange zest from one orange
  • 3 thin slices from an orange to decorate
How-To:
  1. Mix everything together until thickens.
  2. Pour over warm cake :)

It didn't last very long!
