Tacos & Mojitos Night

I may have missed all the Cinco de Mayo celebrations the other day but I made up for it tonight!  I through together random ingredients to make one delicious dinner while Steve perfected our first homemade mojitos...man, is he a keeper!  He shares his mojito recipe below after taco recipe.

Turkey Tacos

Ingredients:
  • ground turkey breast (1 pkg)
  • garlic
  • salt
  • oregano
  • chili powder
  • ketchup (2 tbsp)
  • brown rice (1/2 cup uncooked)
  • bruschetta (1/2 cup)
  • soft tortilla wraps
  • cheese (1 cup, grated)

How-To:
  1. In saucepan, cook rice as normal.
  2. In skillet, brown turkey breast.  Watch it carefully as it will dry up quickly.
  3. Add spices to taste.
  4. Add bruschetta, mix.  You can also use salsa instead.
  5. Add ketchup and rice, mix together.  Simmer for 5 minutes.
  6. Add 1/2 the amount of grated cheese and mix.  The rest of the cheese you can use when assembling your wraps.
  7. Ready to serve!  We like to make our wraps as we go at the dinner table. 

and the best part.... MOJITOS!!!

Steve's Mojito Recipe
  • 1.5 oz Rum (we used Appleton 12 yr)
  • 3/4 oz fresh lime juice
  • 1 oz simple syrup
  • 2 dases Angostura Bitters
  • 2 sprigs of fresh mint
  • top with club soda
Muddle 1 mint sprig with the simple syrup and lime juice in bottom of mixing glass.  Add the rest of ingredients and shake with ice.  Strain over cracked ice into high ball glass, top with soda and garnish with other sprig of mint.  ENJOY!!
