Happy Halloween!

It's that time of the year where you're walking around and not sure if that's some weird person or regular person in a costume.  Oh and candy...lots of candy!

We decided to carve a pumpkin this year.  Not only because it's a fun family activity but I want to puree some pumpkin later for baking.  We also roasted the seeds and they were delicious!  Just throw come seasoning salt, cayenne, and olive oil on them and bake for 45 minutes in 300F oven.  Yum!

Instead of the typical jack o'lantern face i've done since I was a kid, we picked out this design with a window and ghost.  Being a wedding decorator, I have plenty of supply of LED lights so we threw in some purple ones and it created a cool eerie glow!

Date Night Lasagna

The weather has been getting colder and Steve has been working late hours so we haven't really had a chance to have a date night and go anywhere.  That's why I decided to bring date night home.  I prepared my favorite lasagna and went the extra mile setting the table for when he got home.  I used actual white linen tablecloth instead of our usual placemats, linen napkins, votive candles, and a little floral centerpiece.  I didn't have to go buy anything.  What made it special was using what we had around the house.  Steve really appreciated everything and we ended up sitting at the table in the candlelight most of the night...polishing off the bottle of wine!

Mom's Lasagna
  • 1 pkg of lean ground beef
  • 1 onion
  • 1 tsp. minced garlic
  • 1 jar pasta sauce
  • 1 can tomato paste
  • 1 tbsp Cheese Whiz
  • 2 tsp. oregano
  • 1 pkg whole wheat lasagna noodles
  • shredded cheese (i used marbled here)
  • olive oil
  1. Brown the onion and garlic together with a bit of olive oil.
  2. Add ground beef and brown.
  3. Add oregano, pasta sauce, tomato paste, and cheese whiz.  Combine and let simmer.
  4. In separate pot, cook lasagna noodles as per package instructions.
  5. In rectangular pyrex dish, start your layers.  Noodles first, then layer with meat sauce, noodles, sauce, etc etc until you are about 1/2" from top of dish finishing with meat layer.  Spread shredded cheese evenly on top. 
  6. Cover with aluminum foil (spray with non-stick first so doesn't touch cheese).
  7. Bake at 350F for about an hour.
It always tastes even more delicious the next day!  You can also let cool after doing the layers and freeze to bake in future.

Recipe: Carrot Biscuits

This is a very easy recipe that is not too sweet but delicious!  I whipped them up on Saturday morning and everyone munched on them all weekend long.

  • 3/4 cup margarine
  • 1/2 cup honey
  • 2 egg whites
  • 1 tsp vanilla
  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cup grated carrots
  • 1/2 cup raisins
  • Preheat oven to 375F.
  • Mix Butter and honey.  Add eggs and beat well.
  • Blend in vanilla.
  • In separate bowl, sift flour, baking powder, and salt. 
  • Add wet ingredients and mix well.
  • Stir in carrots and raisins.
  • Drop by teaspoon onto greased baking sheets.
  • Bake for 15 minutes.
  • ENJOY!

The joys of living in Calgary......we can go from having beautiful fall weather on the weekend and a few days later it's cold and snow has arrived :(  I just never get used to it!  On the weekend we took a beautiful stroll around Carburn Park and two baby deer literally crossed the path in front of us!  I had to ask someone if I had just saw what I think I had.  They were pretty friendly but we could hear their parent(s) in the bushes so didn't get too close.  Here are some snaps:

New Chairs!

Once upon a time Steve had me convinced to purchase a pair of accent chairs for our living room.  I agreed and in came the new chairs and out went my previous leather club chair and ottoman.  Things is the next morning neither of us really liked the chairs but both didn't want to say anything so we lived with it.....until we got our new sofa a month ago.  Now we REALLY don't like the chairs for this room.  So we have been on a hunt and finally came across some nice chairs at a price we were willing to pay at none other than IKEA!  They really make the room into what we like....a mix of mid-century modern, hotel chic, and comfort.  At first I wanted printed fabric but I decided these will look great and the little lumbar pillow will soon get a makeover with some pretty fabric I have yet to buy.  And I can even keep changing my mind on the pillow as its an easy piece to change!  I apologize the pictures aren't the greatest but when everything is done I will get a better picture!
