Recipe: Carrot Biscuits

This is a very easy recipe that is not too sweet but delicious!  I whipped them up on Saturday morning and everyone munched on them all weekend long.

Ingredients:
  • 3/4 cup margarine
  • 1/2 cup honey
  • 2 egg whites
  • 1 tsp vanilla
  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cup grated carrots
  • 1/2 cup raisins
How-To:
  • Preheat oven to 375F.
  • Mix Butter and honey.  Add eggs and beat well.
  • Blend in vanilla.
  • In separate bowl, sift flour, baking powder, and salt. 
  • Add wet ingredients and mix well.
  • Stir in carrots and raisins.
  • Drop by teaspoon onto greased baking sheets.
  • Bake for 15 minutes.
  • ENJOY!
