Recipe: Brie on a Stick

Made these little guys a while ago and they were soo yummy!  We might do without the stick next time so you can just plop them in your mouth one after the other.

  • 2 sheets puff pastry, thawed but still cold
  • 4 oz brie cheese, cold
  • 1/3 cup fig jam
  • 1 large egg, beaten with a splash of milk
  • coarse sea salt
How To:
  1. Cut puff pastry into 2 1/4" tall and 3" wide pieces.
  2. Combine milk and egg, beat.
  3. Brush 1/2 the rectangles with egg wash.
  4. Add popsicle stick to centre of these.
  5. Place a small piece of brie on top of each.
  6. Top with 1/2 teaspoon of jam.
  7. Take the other rectangles and top these ones.  Use a fork to press down edges to stick together.
  8. Place on cookie sheet and sprinkle with coarse salt.
  9. Bake at 375F for 12 to 14 minues.
  10. Remove and let cool completely.

30 Years

Yesterday I celebrated my 30th Birthday...that's right, the big one! So many people asked me if I was dreading it and joked about being "29 forever" but the truth is i'm not that kinda gal.  I had a SPLENDID day filled with love and well wishes from all those who matter to me.

Towards the end of the day I did do some reflection, looking at what I have accomplished and the future.

Last 30
Made it through childhood, teenage years, and all the lessons in between.  Graduated high school and college.  Started my own company which I am still so passionate about.  Loved and felt heartbreak...learned what true love really is.  Proud of my family and my two beautiful nieces that mean everything to me.  Became happy with my body, then lost it all.  Learned to trust others, learned to deal with anxiety and stress, learned to "let it go".  Met the man that I now love more than anything in this world.  Learned what it's like to live with children and putting others before myself.  Learned the art of compromise.  Learned to love myself and it's ok to put myself first sometimes.  Learned that you never stop learning. 

Next 30+
My only anxiety turning 30 was that it meant those older than me are also aging and might not be around one day.  While I already knew this it just reminded me and it scares me to lose those i love.  I have accepted that I am not married before 30.  It's not the age that matters to me.  Hopefully one day soon this wish will be fulfilled.  I look forward to years with the man I love and his children too.  I look forward to many travels and new experiences constantly.  I look forward to continued success however they may happen.

Recipe: Christmas Bark

For the second year in a row I have made "Christmas Bark" for our open house.  Both times my guests have eaten every last bit.  Seriously, the bowl gets CLEANED OUT.  It is quite delicious!


  • 1 cup margarine
  • 1 cup brown sugar
  • 40 saltine crackers
  • 1 pkg chocolate chips

  1. Line a cookie sheet with tinfoil.
  2. Lay crackers evenly on the cookie sheet.
  3. Combine sugar and margarine in a saucepan.  Heat to boil.  Remove from heat and pour over crackers.
  4. Bake for 10 minutes in 350F oven.
  5. Immediately sprinkle with chocolate chips and spread over entire cookie sheet as it melts.
  6. Allow to cool completely before breaking into pieces.

2013 Golden Globe Awards - Red Carpet Review

Award season is here!  I love watching the red carpet glamour, the funny (and not so funny) speeches, and even tear up a little on the sappy ones.  Last night aired the Golden Globes and here is some commentary from the red carpet by moi!

Amanda Seyfried - She totally rocked this sexy dress

Amy Adams - I love the fit & style of the dress, just would love it a tone darker

Anne Hathaway - i love her...dress looked great, I would of added a necklace though

Claire Danes - best one month post-baby body hugging dress

Eva Longoria - someone tell her the whole leg thing was so last year?

Jennifer Garner - love the color and fit on how cute her & Ben were to eachother

Lea Michele - I think this looks great on her especially the full neck

Jennifer Lopez - beautiful dress on her but left me "meh"

Jessica Chastain - the color of the dress and fit was made for her...I wish only that her hair was side parted or pulled back instead of the harsh center part

Jessica Alba - another pretty coral gown, love the ruffle back, perfect necklace

Jennifer Lawrence - love the coral color, love her, side breast view just a bit weird

Lucy Liu - i vote for worst dressed...too funky for a January event

Big Christmas Family Dinner

This past Christmas we went to my parents home on Christmas Day for a traditional dinner.  Me and Steve agreed we will alternate years between his parents house and mine.  My family likes to make it a bit more formal and with certain traditions from when we were kids.  I have always helped my mom set the table in advance and every year we do it slightly different.  Even though I no longer live at home I always make sure to go a day or two before and set it up.  She usually invites about 15 aount, uncle, cousin and her growing family, my sister and her family, and now Steve and his girls. 

This year we feasted on pork roast, turkey, sweet potato & bacon casserole, veggies, roasted potatoes, rice, shrimp, and so much dessert I could have passed out!  I also always make a punch for my mom but this year I made something different.  I took champagne flutes and dropped a few frozen cranberries in each.  Then I filled each glass 1/2 full (let's be optimistic) with cranberry cocktail, and the rest of the glass with SkinnyGirl Cosmo.........YUM!!!

Recipe: Cheddar Olive Balls

***my apologies to everyone! I have been having uploading trouble so while this was meant to be posted last Friday it is only happening now...oopsie!***

Hope everyone had a Happy New Year!  We've all recovered, gone back to work, and got caught up on what we missed so it's back to blogging!  I have a great recipe to share with you today.  We made this as an hors d'oeurve during the holidays and every last one was eaten by the end of the party.  They are delicious.  The recipe was found in my "All You Need Is Cheese" magazine delivered back in November.  Enjoy!

  • 1 cup medium cheddar, grated (i used marbled cheese instead)
  • 4 tbsp butter, softened (i used margarine instead)
  • 1/2 cup flour
  • 1-2tbsp water
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • 24 pimento stuffed green olives, drained
  1. Mix the cheese into the butter, then stir in the flour, water, salt and paprika to combine thoroughly.
  2. Using about a teaspoon per olive, flatten the dough into a disk and wrap around each olive, pinching to seal completely.
  3. Set on a baking sheet and bake for 15 minutes at 400F.
