Recipe: Corn Muffins

All the talk about Super Bowl parties and bowls of chili sure got us in the mood to make our own this weekend.  We are not football fans but love the aspect of people getting together to watch the game and the big feast of course.  I made my usual crock pot chili and decided to try my hand out as corn muffins (recipes found on allrecipes.com) which we devoured fresh from the oven!

  • 1 cup flour
  • 1 cup cornmeal
  • 1/3 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 egg, beaten
  • 1/4 cup canola oil
  • 1 cup milk
  1. Preheat oven to 400F and grease muffin pans.
  2. In large bowl combine flour, sugar, cornmeal, baking powder, and salt.
  3. Add egg, oil, and milk.  Sit gently until combined.
  4. Spoon batter into muffin pans.
  5. Bake for 20 minutes.
