New projects...

Spring has sprung! Yet its still a bit chilly here in Calgary.  It will be worth the wait once it does warm up.  Easter is fast approaching and I have many recipes to come up with for various get-togethers.  But beyond that, I have been busy coming up with new projects for my Etsy store that will soon be revealed.  Here`s a hint....

Recipe: BBQ Pineapple Pulled Pork Sandwiches

BBQ Pineapple Bulled Pork Sandwiches w/ green beans and green mashed potatoes (yes, our mashed potatoes were green because it was St. Patrick's Day!)

Have I told you I love my crock pot ! The things that come out of that thing WOW!  I had initially combined all these ingredients into a freezer bag and kept there for those days where I want something I can just throw in the crock pot and go to work.  The day came to use it and everybody loved how it turned out....such a simple recipe too!


  • 1 pork roast (or shoulder)
  • 1 can of crushed pineapple
  • 1 bottle of BBQ sauce
  • 1 oz bourbon
  • sandwich buns
  1. Simply combine all ingredients together. If you are freezing it, put it all together in a large freezer bag.  When ready to use, throw it right in the crockpot.
  2. Cook on low for about 8 hours. If isn't going into the crockpot frozen, you may want to decrease the time by an hour or so just in case.
  3. When ready take a fork and shred roast in pieces, and stir.
  4. Throw onto sandwich buns and enjoy! These would also be good as "tacos" with some coleslaw.

Top o' the Morning!

Is everyone recovering from St. Patrick's Day green beer? I did not partake in those types of festivities but did enjoy some fun this weekend. Yesterday we made BBQ Pineapple Pulled Pork that was amazing (recipe to follow this week!). On Saturday though we made cappucinos but with green chocolate shavings instead of the usual dark chocolate we like.  And as a treat me and Michayla made Lucky Charms Treat, which is just a take on Rice Krispy Treats....just switch out the cereal!

Recipe: Tiramisu Trifles

Some things are just too good for words!  I made these cups of deliciousness for a casual dinner having my parents over this past weekend.  The original recipe can be found here but I adapted it a little to suit us.


For the base:
  • 1 cup Cool Whip Light
  • 1/4 cup granulated sugar
  • 1 cup ricotta cheese
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon Kahlua
  • 1 teaspoon instant espresso granules
For layering:
  • 1 cup Cool Whip Light
  • 1/2 cup chocolate cookie crumbs
For the garnish:
  • Italian ladyfinger cookies
  1. Prepare "Layering" ingredients by mixing ingredients listed together and set aside.
  2. Combine whip cream and granulated sugar (from "Base" ingredients) in a medium bowl.
  3. In a separate bowl, combine ricotta cheese, cocoa powder, vanilla, and instant espresso granules. Beat until blended.
  4. Add ricotta mixture to the base ingredients mixture, gently fold in with a rubber spatula until no white streaks remain.
  5. To assemble, start with a layer of the ricotta mixture. Next, add a layer of the whipped cream, and then a layer of cookie crumbs. Repeat until all ingredients are used, and garnish with leftover crumbs and a ladyfinger cookie.
  6. Best if refrigerated at least 2 hours before serving.

Recipe: Pepperoni Puffs

Super delicious! The family got a kick out of these little wonders. Super easy to make and you can change ingredients for some much varieties.

  • 1.5 cups of flour
  • 1.5 teaspoons of baking powder
  • 1.5 cup of milk
  • 2 egg
  • 2.5 cups of shredded cheese (I used marble)
  • 8 ounces of chopped pepperoni
  • bacon bits
  • 1 small can black olives

1. Preheat oven to 400F.
2. Grease a mini muffin pan with nonstick cooking spray.
3. In a large bowl, add all of the ingredients (except bacon bits and olives) and with a spoon stir until completely mixed.
4. Spoon batter into the muffin cups about 2/3 full. Sprinkle with bacon bits and black olives.
5. Bake in oven for 15-17 minutes. Serve while warm. I serve with a side of marinara sauce.

Another Winter Storm

March 1st....a beautiful, sunny day. Light jackets at the most, definitely sunglasses, and maybe a cold drink. 

March 3rd....winter storm, cold, windy, over 15cm snow in hours.  Officially snowed in.  I've lived in Calgary long enough to know this is "normal" and can happen weeks from now again.  Never get too excited Spring is coming until you get a few more dumps of snow.
