Recipe: Spinach Manicotti

I love when I get a break from cooking. Don't get me wrong, I LOVE to cook and bake. But some days I just hit a wall and need to not cook. Luckily Steve is handy in the kitchen and introduced me to his manicotti recipe years ago. I requested he make it for me the other day again.  Its a light and delicious meal :)

  • 1 package Manicotti Shells
  • 1 cup ricotta cheese
  • 1 cup frozen spinach, thawed
  • 1 package ground pork
  • 1/2 can of diced tomatoes or pasta sauce
  • 1 cup shredded cheese
  1. In a pan with a bit of olive oil, cook ground pork.
  2. Meanwhile cook manicotti shells until al dente.
  3. Add ricotta and spinach to pork and mix together.
  4. With a small spoon, stuff the manicotti shells with the mixture. Lay each in large pyrex dish once stuffed.
  5. Top with tomatoes and shredded cheese
  6. Bake in oven for 15-20 minutes at 350F.

Earth Day

Yesterday, April 22nd was Earth Day. I stayed unplugged to conserve energy in honor of that day so am catching up now.  I admit I am not always the most environmentally friendly person but I do try here and there. How about you?

Here are some things I do now:
  • Recycle paper at home and work
  • Recycle boxes that I get by using them for shipments going out
  • Use a travel mug
  • Reuse plastic bags including ziploc bags
  • Turn off lights whenever possible
  • Keep furnace low
  • Buy organic fruits/veggies
There's always more I could be doing. These are things I will try this year:
  • Use reuseable shopping bags for groceries
  • Unplug small appliances and electronics when not in use at home

Recipe: Thumbprint Cookies


You're gonna love these! They taste like shortbread cookies but BETTER!


·         10 tbsp margarine

·         ½ cup icing sugar

·         ¼ tsp salt

·         1 tsp vanilla extract

·         1 ¼ cup flour

·         Semi-sweet chocolate (for melting), mini-eggs



1.       Preheat oven to 350F.

2.       Beat together margarine, sugar, vanilla, and salt until smooth. Beat in flour slowly until dough forms.

3.       Roll teaspoons of dough into balls. Place on un-greased cookie sheet and bake for 10 minutes.

4.       Remove from oven and press thumb prints into center of balls.

5.       Place back in oven for 7-9 minutes.  Allow to cool completely on rack.

6.       Melt chocolate in microwave. Allow to cool slightly then pour with teaspoon into thumbprints.

7.       Add a chocolate mini-egg on top.

Flowers in Perfect Time

We have all bad days...mine was yesterday.  Emotionally drained.  I got home from work, started making dinner before Steve got home.  He walks through the door with this beautiful handpicked arrangement of flowers for me. I burst into tears (poor guy!).  After a bit of venting and much adoring, I felt better.  I am lucky.

Recipe: Lemon Chicks

This lemon cookie recipe I usually make at Christmas time but they are do delicious and I found a cool idea on none other than Pinterest which helped me adapt them into cute Easter cookies. Everyone loved how adorable they were and thought they were yummy!


  • Box of lemon cake mix
  • 1/3 cup of vegetable oil
  • 2 eggs
  1. Mix all 3 ingredients together...yup, that easy!
  2. To make into chicks, roll a small ball and slightly larger one. Put them against eachother and they will cook together while keeping the chick shape.
  3. Bake in 350F oven for about 12-15 minutes.
  4. Remove from oven and immediately add mini-chocolate chips for eyes.
  5. Let cool completely on cooling rack.
  6. I then used vanilla frosting I had leftover in fridge and added yellow and orange food coloring to separate bits.  I used a ziplock bag with corner poked out to pipe yellow feathery hair on chick cookie heads. With the orange I piped a beak and feet.
How cute are they?!

I found these cute boxes at Dollarama and used them to distribute our cookies to friends and family.
