Recipe: Crazy Chocolate Raspberry Cake

Recently I had a friend from Toronto come visit our city because her in-laws are now living here. We got together for dinner and I wanted to make a cake to bring along. Last time I had seen her was at her wedding and she now has 3 kids!!!  So it was a welcome to her whole family.


  • 1 1/2 cup flour
  • 3 tbsp cocoa
  • 1 cup sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp white vinegar
  • 1 tsp vanilla extract
  • 5 tbsp vegetable oil
  • 1 cup water
  • raspberry jam
  • frosting 


  1. Preheat oven to 350F. Grease pan (s). I used two small pans because I wanted to stack them.
  2. Mix dry ingredients together in large bowl.
  3. Make a depression in center and add rest of ingredients. Mix well until smooth.
  4. Pour into pan.
  5. Bake for 35-40 minutes.
  6. Let cool completely. On one layer spread a good amount of raspberry jam. Then stack the other layer on top.
  7. Frost with icing.
