Recipe: Pork Tenderloin with Sweet Potato


Delicious pork tenderloin slowly barbecued on a charcoal grill to perfection! This was seriously good. It was so easy to slice into and still moist inside! The sweet potatoes were our summer staple this year. We cut them in rounds this time instead of cubes or wedges. 

Ingredients:
  • pork tenderloin
  • coarse salt
  • black pepper
  • lemon pepper seasoning
  • olive oil
  • sweet potato
How-to:
  1. In a bowl, take the pork tenderloin and sprinkle with the salt, peppers, and olive oil. Rub it into the tenderloin. Cover and let marinate for at least 2 hours.
  2. Chop your sweet potato any way you wish (we did rounds this time). Sprinkle with black pepper, salt, and olive oil.
  3. Place tenderloin first on grill as it will take a bit longer than potatoes. Grill on indirect heat for about 45 minutes. Potatoes will take about 30 minutes.
